1. What is broken rice?

Broken rice is created when rice grains are broken during the process of drying, transportation, or milling. Despite the uneven size of the grains, this rice type still retains the nutritional values from the germ and bran layers of the rice grain. During the milling process, the top portion of the rice grain, also known as the “rice husk”, may be broken by the milling machine during the process of separating the bran layer. Prior to the development of automatic sorting, farmers used manual sieves to separate whole rice grains from broken rice.

Outside of Vietnam, this rice type is also widely consumed in Thailand, Bangladesh, and many other places throughout Southeast Asia, serving various purposes, including being used as food, animal feed, ground into flour for laundry and cooking, or in the production of leather and cosmetics.

2. Characteristics of this rice type

Good quality broken rice grains will have a milky white color. When cooked, the rice will be fluffy, soft, and dry. Even when cooled, it will still retain its delicious taste. Note that to ensure the rice is evenly cooked, you will need to soak the rice for half an hour before cooking to allow the grains to develop small cracks. Then, drain the water before cooking.

The water used to cook the rice must be boiling hot before adding the rice and stirring it evenly. When the water is almost dry, simply lower the heat and stir the rice once more to complete the cooking process.

3. Types of broken rice at Reconnect International

504 Broken Rice504 Broken Rice is made from the IR50404 rice variety (or IR504) from the International Rice Research Institute (IRRI). It has been widely grown in the Mekong Delta since 1992. It has since gained popularity due to many outstanding factors such as efficiency, high flexibility for many farming areas, especially for short harvest seasons. This has pushed up productivity and reduced prices to be reasonable for customers.

 

3.2. Broken Glutinous Rice

Vietnamese broken glutinous rice is commonly consumed in developing countries such as Laos and Cambodia. It has a smooth and shiny appearance. In the north and northeast of Thailand, this is the most famous and notable rice variety called “Tong”. It is mainly grown in the north of Thailand.

 

 

3.3. Broken Fragrant Rice DT8

Broken Fragrant Rice DT8Broken Fragrant Rice DT8 is a fragrant rice variety that was recently selected and developed in Vietnam. DT8 has a sweet and fragrant smell.Farmers grow this type of rice in many areas of the Mekong Delta. Researchers have developed DT8 as a large rice variety in the Mekong Delta, as well as the Central Highlands and the South Central Coast. DT8 rice is grown three times a year, during the Winter-Spring, Summer-Autumn, and Autumn-Winter seasons.

 

3.4. ST25 Broken Rice

ST25 Broken RiceST25 Rice is one of the products in the ST product line. ST stands for “Soc Trang” – the origin of this rice variety located in the Mekong Delta. In addition, this type of rice is also grown in many other regions such as Dong Thap, Ca Mau, etc. These areas are suitable because of the created water system, good climate, and experienced farmers. ST25 Rice has been famous for its quality and flavor.

4. Current price of broken rice

Currently, the price of this rice type in the market ranges from 12,000-15,000 VND/kg. Depending on the quantity purchased or imported, discounts may be available.
